Three Latin American Chefs Dazzle with Unique Menus Highlighting Flavors and Vegan Options
With the arrival of the warmest season of the year, Lomas Hospitality and Food & Travel Mexico celebrated the summer edition of the 4 Seasons of Flavor Culinary Gathering. This event featured three outstanding Latin American chefs who presented thematic dinners with exquisite and unique menus, reflecting the flavors of the season and including innovative vegan options.
The talented chefs were Liz Galicia from Salón Mezcalli Restaurant, Rebecca Noel from El Mundo, and international guest Daniela Osorno from the acclaimed X.O. restaurant, ranked 27th on the Latin America’s 50 Best Restaurants list.
Over three days, at the Fuentes Culinary Theater in El Dorado Royale, Riviera Maya, these chefs offered their own interpretations of summer cuisine with spectacular six-course dinners for hotel guests and food enthusiasts alike.

Friday, July 19
Chef Liz Galicia, known for her work at one of the best mezcalerías and antojerías in Puebla and recognized as the Queen of Chile en Nogada, presented a menu that included:
- Kampachi crudo with avocado
- Tlacoyo of fava beans and shrimp
- Seasonal fish
- Poblano mole with smoked vegetables
- Chile en nogada
- Cookie flan with capulín sweet
Saturday, July 20
Chef Daniela Osorno from Medellín, Colombia, offered a revolutionary menu that included:
- Arracacha tartlet
- Refried lobster with roasted broth
- Raw fish with mamey tiger's milk
- Coconut shrimp
- Duck with foie gras and plum
- Pecan ice cream with chontaduro and mole

Chef Rebecca Noel, known for her focus on promoting a cuisine free of animal suffering, presented an innovative vegan menu that included:
